How to Make It
8 stepsDivide 200g ground beef into 4 equal balls (50g each).
Heat a cast iron skillet over high heat until smoking.
Place 2 beef balls on the skillet and immediately smash flat with a heavy spatula. Season with salt and pepper.
Cook for 2 minutes until the edges are crispy and laced. Flip, place a half slice of cheese on each, and cook 1 more minute.
Stack two patties together. Repeat with the remaining two balls.
While the patties cook, caramelize 30g thinly sliced onion in a little oil over medium heat for 5-7 minutes until golden.
Mix special sauce: 1tbsp mayo, 1tsp ketchup, 1tsp mustard, a splash of pickle juice.
Assemble: place each double-stack in a butter lettuce cup, top with caramelized onions, pickles, tomato, and special sauce.
Ready to plate!
