- stone-ground grits100g
- cheddar cheese30g

How to Make It
6 stepsCook 2 strips of bacon in a skillet until crispy. Remove and chop into bits. Reserve the bacon fat in the pan.
Bring 400ml water and a pinch of salt to a boil. Slowly whisk in 100g stone-ground grits. Reduce heat to low, cover, and stir every few minutes for 15-20 minutes until thick and creamy.
Stir 30g shredded cheddar and 1tbsp butter into the cooked grits until melted and smooth.
Pat 200g large shrimp dry. Toss with 1tbsp cajun seasoning, salt, and pepper.
Heat the reserved bacon fat over high heat. Sear the shrimp for 2 minutes per side until blackened and just cooked through.
Spoon the cheesy grits into a bowl, arrange the shrimp on top, scatter with bacon bits and green onions, squeeze lemon over, and add a dash of hot sauce.
Ready to plate!
